Inside a closed whipper, nitrous oxide dissolves into a suitable chilled mixture under pressure. When the mixture is dispensed, pressure falls and the gas expands into fine bubbles, creating an aerated texture.
Temperature, fat or stabiliser content, headspace, pressure and nozzle design all affect the final result. That is why the equipment and recipe instructions matter more than simply adding more gas.
