Why N2O is used for whipped cream
Nitrous oxide dissolves into suitable fat-containing mixtures under pressure and expands when dispensed, producing fine bubbles without the sharp acidity associated with dissolved carbon dioxide.
CO2 reacts with water in a mixture to form carbonic acid. That behaviour is useful in sparkling drinks but can create an undesirable sour, fizzy result in dairy cream.
Do not choose by cartridge appearance
- Read the gas label and equipment manual every time.
- Do not place a cartridge into equipment unless the manufacturer approves that gas and format.
- Keep N2O, CO2 and N2 stock clearly separated in a professional storeroom.
