Step-By-Step Guide

HOW TO USE A
CREAM WHIPPER

Charging a cream whipper properly is the difference between perfect, stable whipped cream and a watery mess. Here is how professional kitchens do it.

Step By Step

1

Chill everything first

Use well-chilled double cream (or your base liquid) and a chilled whipper for the best texture and stability.

2

Fill the whipper

Pour your liquid into the whipper canister, staying below the fill line marked on the body — overfilling stops it working properly.

3

Seal and attach the charger

Screw the head on securely, then load one N2O charger into the charger holder/sleeve until you hear it pierce and release.

4

Shake and rest

Shake the whipper vigorously 4–5 times to fully mix the gas through the liquid, then let it rest briefly in the fridge if not using immediately.

5

Dispense

Hold the whipper upside down and squeeze the lever gently to dispense — a short burst gives more control than one long press.

Beyond Whipped Cream

A cream whipper is a general-purpose aeration and infusion tool — professional kitchens use it well beyond dessert toppings:

  • Flavoured foams and espumas for plating
  • Rapid infusions — spirits, oils, syrups and stocks
  • Aerated sauces and mousses
  • Carbonated fruit and cocktail garnishes

Safety First

Only ever use food-grade chargers in a proper cream whipper — never a makeshift device, and never inhale directly from a charger or whipper. Store canisters upright in a cool place, keep them away from children, and dispose of empty canisters responsibly. Cream chargers are intended solely for food preparation.

Cream Whipper FAQs

How many chargers do I need per litre of cream?

As a general guide, one 8g charger is typically used per 0.5–1 litre in a standard whipper. High-capacity canisters like a 640g SmartWhip are designed for continuous professional use rather than a fixed per-litre ratio — your whipper or regulator manual will confirm the correct charge rate for your specific setup.

Why is my whipped cream coming out watery or thin?

This is usually caused by using warm cream, overfilling the canister above the fill line, or not shaking thoroughly enough after charging. Chilling your cream and whipper beforehand makes the biggest difference.

Can I reuse a cream charger?

No. Each nitrous oxide charger is single-use — once pierced and the gas released, it cannot be recharged or reused. Empty canisters should be disposed of responsibly (most are recyclable steel).

What else can I make with a cream whipper besides whipped cream?

Professional kitchens use cream whippers for foams, mousses, flavoured infusions (spirits, oils, syrups), aerated sauces and espumas — the gas aerates and pressurises any suitable liquid base, not just cream.

Is it safe to use cream chargers at home?

Yes, when used as intended: only with a proper cream whipper (never a makeshift device), following the fill line, and always for food preparation. Keep chargers away from children, store them upright in a cool place, and never heat or puncture a canister outside of a whipper.
