Espuma is a broad name for an aerated preparation served from a culinary siphon. Successful versions balance flavour, viscosity, temperature and a stabilising structure while remaining smooth enough to pass safely through the equipment.

Three techniques to understand

Cold espuma

Warm espuma

Designing an espuma base

  • Start with the target flavour and serving temperature.
  • Choose a structure appropriate to the recipe, such as fat, gelatine or a tested hydrocolloid.
  • Blend thoroughly and strain through a fine sieve or suitable filter.
  • Use precise weights and document the recipe for repeatability.
  • Test flow and holding stability before placing the preparation on a menu.
  • Apply normal allergen, chilling, reheating and cleaning controls.
